Pumpkin Cornbread

1/3 cup butter, softened
3/4 cup sugar
2 eggs
1 cup pumpkin
3/4 cup milk (lowfat is okay)
1 cup unbleached flour
3/4 cup cornmeal
1 teaspoon allspice
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped pecans or walnuts

Preheat oven to 375 degrees; lightly grease a 9" iron skillet and sprinkle with cornmeal.

Beat first 3 ingredients well, add next 2 ingredients until well blended. Sift dry ingredients together then add to the wet ingredients. Add nuts. Pour into skillet. Garnish with a few whole pecans. Bake 45 minutes. Slice in wedges. Serve warm and enjoy.
