tell your big frother, Joshua thanks for the appreciation...I love you photo gallery, you like to chew up TP rolls? Does your mom stuff it with goodies or do you like it plain?

Today's and the final breakfast dish this week is:
1/2 cup Beans or bean mix
1/2 ear of corn, cut off cob or equivalent amount of frozen corn
2 tablespoon squash (any kind) chopped into 1/2" cubes
1/2 small sweet potato (or yam) cooked and cut into 1/2" cubes
1 jalape?o pepper, chopped
1 clove garlic, minced
1 egg (or egg substitute)
1 tablespoon skim Ricotta cheese
small amount of mixed veggies, fresh or frozen
Soak beans for 1 hour before preparing.
Mix of above in a bowl.
Should be pasty consistence, but not runny.
Add water if necessary.
Spread on plate, and cover.
Cook in Microwave on High for 6 minutes.
Remove and break up with fork.
Sprinkle vitamins and mix well.
I usually grate some cheese on top for flavor.
