3 cups all-purpose flour 1/4 cup baking cocoa
2 cups sugar 3 eggs beaten
1 teaspoon baking soda 2 cups grated zucchini
(about 1 large)
1 teaspoon ground
cinnamon 1 cup vegetable oil
½ teaspoon salt 1 cup chopped pecans
¼ teaspoon baking powder 1 teaspoon vanilla extract
Preheat oven to 325 degrees F. Ina large bowl, mix together the flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients. Stir Zucchini mixture into flour mixture. Grease well and lightly flour two 9” x 5” loaf pans; divide mixture evenly between the loaf pans. Bake for 1 hour or until wooden toothpick inserted in center comes out clean. Cool for 10 minutes on a rack, then remove from pan. Cool completely before slicing.
Finally I'm back on BC after being kicked off for several days! Now Mom is trying to run me around to everybirdie's pages to deliver my BOTM blogs before it gets too late,we didn't get back onto BC until late this afternoon so I don't have much time to get votes in for today and as I lost all that time for the last several days I don't know how this will affect my getting into the castle but I'll soon find out that's for sure! I can't thank you for your continued love and supporting votes for my BOTM run,you just don't know how much you mean to me!
