3 cups all-purpose flour 1/4 cup baking cocoa
2 cups sugar 3 eggs beaten
1 teaspoon baking soda 2 cups grated zucchini
(about 1 large)
1 teaspoon ground
cinnamon 1 cup vegetable oil
½ teaspoon salt 1 cup chopped pecans
¼ teaspoon baking powder 1 teaspoon vanilla extract
Preheat oven to 325 degrees F. Ina large bowl, mix together the flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients. Stir Zucchini mixture into flour mixture. Grease well and lightly flour two 9” x 5” loaf pans; divide mixture evenly between the loaf pans. Bake for 1 hour or until wooden toothpick inserted in center comes out clean. Cool for 10 minutes on a rack, then remove from pan. Cool completely before slicing.
I'm so sorry that I haven't been by in the last several days as I was kicked off BC and couldn't get back on til late this afternoon,so now Mom is flying me around to make all my visits for my BOTM campaign!
