3 cups all-purpose flour 1/4 cup baking cocoa
2 cups sugar 3 eggs beaten
1 teaspoon baking soda 2 cups grated zucchini
(about 1 large)
1 teaspoon ground
cinnamon 1 cup vegetable oil
½ teaspoon salt 1 cup chopped pecans
¼ teaspoon baking powder 1 teaspoon vanilla extract
Preheat oven to 325 degrees F. Ina large bowl, mix together the flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients. Stir Zucchini mixture into flour mixture. Grease well and lightly flour two 9” x 5” loaf pans; divide mixture evenly between the loaf pans. Bake for 1 hour or until wooden toothpick inserted in center comes out clean. Cool for 10 minutes on a rack, then remove from pan. Cool completely before slicing.
I'm sooo sorry I haven't been by in the last several days but we got thrown off BC and didn't get back on til late this afternoon! I'm wondering how you and the flock are doing and how your sweet Mom is these days? Is she still looking for work? We have all been praying so hard that everything will work out for your sweet wonderful Mom! Please tell her to email or blog us to let my Mom know how she is doing! We really miss talking to you all sooo much! Here I am trying to fly to get everybirdie's votes for my BOTM campaign as I lost several days because of BC being down and all!
