2 cups all-purpose flour 4 eggs
½ teaspoon salt 1 can (16 ounces) pumpkin
1 teaspoon baking powder 1 ½ cups sugar
1 teaspoon baking soda 1 cup vegetable oil
1 teaspoon ground cinnamon 1 teaspoon vanilla extract
1 teaspoon nutmeg
Preheat oven to 350 degrees F. In a large bowl, sift or mix together well the flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, beat together the eggs, pumpkin, sugar, oil, and vanilla extract. Gradually add the flour mixture to the pumpkin mixture; beat well. Pour batter into a 9”x 13” baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool in pan on a wire rack.
NOTE: Cool completely before covering with whipped topping or your favorite frosting.
