|Dixie & Little Angel
come into the house and see that Momma Rose has the recipe of today on the counter ready to collect all the ingredients for! Little Angel is soo eggcited to see another recipe and since she and Dixie had so much fun making the last one she asks Momma Rose if she and Dixie could make this one too for her! Momma Rose says sure,as long as you two don't get batter on my walls or ceilings or cabinets! Momma Rose gives Little Angel some soft head scritches behind her ears and a kiss on her beak and gives her the recipe! I guess you two can have some fun in the kitchen, you did pretty good the other day!
2 cups all-purpose flour 4 eggs
½ teaspoon salt 1 can (16 ounces) pumpkin
1 teaspoon baking powder 1 ½ cups sugar
1 teaspoon baking soda 1 cup vegetable oil
1 teaspoon ground cinnamon 1 teaspoon vanilla extract
1 teaspoon nutmeg
Preheat oven to 350 degrees F. In a large bowl, sift or mix together well the flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, beat together the eggs, pumpkin, sugar, oil, and vanilla extract. Gradually add the flour mixture to the pumpkin mixture; beat well. Pour batter into a 9”x 13” baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool in pan on a wire rack.
NOTE: Cool completely before covering with whipped topping or your favorite frosting.
