2 cups all-purpose flour 4 eggs
½ teaspoon salt 1 can (16 ounces) pumpkin
1 teaspoon baking powder 1 ½ cups sugar
1 teaspoon baking soda 1 cup vegetable oil
1 teaspoon ground cinnamon 1 teaspoon vanilla extract
1 teaspoon nutmeg
Preheat oven to 350 degrees F. In a large bowl, sift or mix together well the flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, beat together the eggs, pumpkin, sugar, oil, and vanilla extract. Gradually add the flour mixture to the pumpkin mixture; beat well. Pour batter into a 9”x 13” baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool in pan on a wire rack.
NOTE: Cool completely before covering with whipped topping or your favorite frosting.
I so understand about our parronts being sick,my dad just had surgery two weeks ago and my Mom was going crazy driving him to all his drs appointments and then my Nana just got done having cataract surgery and Mom's been taking her also to her drs appointments etc so she's been driving all over the place everyday for both of them! Please give your sweet Mom a warm hug from my Mom and a warm wing hug from me to help make her feel better! I'm just so thankful for all the love and supporting votes you are sending me!You mean sooo much to me and always will!
