6 to 8 servings
4 eggs ¼ cup chopped fresh parsley
or 2 tablespoons dried parsley flakes
½ cup grated Parmesan cheese
½ cup chopped onion ½ cup vegetable oil
½ teaspoon seasoned salt ½ cup whole wheat flour
½ teaspoon dried oregano 1 cup biscuit baking mix
½ teaspoon garlic powder 3 cups grated zucchini
Preheat oven to 375 degrees F. In a large bowl, beat the eggs, add all the remaining ingredients, and mix well. Pour mixture into an ungreased 9-inch square baking pan and bake for 30 to 35 minutes. To brown top, put under preheated broiler for the last 2 or 3 minutes. Cool for a few minutes, then cut into squares.
NOTE: If you have the time, give it a zip with chopped fresh garlic instead of garlic powder.
Mom had skin sis here all afternoon so now I'm late getting my visits out and have to run to make it before it gets too late! Mom went for a walk with skin sis and kept taking pictures of the neighborhood and our house,she couldn't fit the whole house in though so she had to take it in bits and pieces! Then the two of them spent the rest of the late afternoon in the kitchen baking hot cinnamon rolls,cinnamon toast crunch muffins and apple cake! I got to have some of that! Was it good!
