Sweet Potato Bread
3 loaves

3 ½ cups all-purpose flour 1 cup vegetable oil
2 teaspoons baking soda 4 eggs
½ teaspoon salt 2/3 cup water
1 teaspoon ground cinnamon 2 cups cooked mashed sweet
potatoes (about 4 large yams)
1 teaspoon ground nutmeg 1 cup chopped nuts (optional)
3 cups sugar

Preheat oven to 350 degrees F. In a large bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg. In another large bowl, combine the sugar and oil; beat well. Beat in the eggs. Add the flour mixture and water alternately. Stir in the sweet potatoes and chopped nuts. Divide the batter evenly among three greased 9”x 5” loaf pans. Bake for 1 hour or until toothpick inserted into center of loaves comes out clean. Cool in pans on rack.

How are things with you? I'm hearing that lots of everybirdy are getting snow today sometime! I'm just hoping that it doesn't come here for a looong looooong time!Mom is just not looking forward to all that shoveling at all! Mom is a little sad today remembering our sweet fister Gabbie who flew to RainBow Bridge two years ago today. She just loved to dance and just loved music so much,and she really had the rhythm to match too! She would get all eggcited when she heard her favorite song and dance and squawk with joyful noise and really dance! Fly free sweet Gabbie with all your beautiful angel friends!
