Biscotti for humans, (but birds can try it too),
Ingredients:
1/3 cup baker's sugar
1/3 cup light brown sugar
1/4 cup butter or margarine, softened
1 tablespoon anise seed, crushed
3 eggs
1 1/2 cups unbleached flour
1 cup white whole wheat flour
1 tablespoon baking powder
1/2 cup sliced almonds
Directions:
1. Preheat oven to 350 degrees. Lightly grease a cookie sheet.
2. In a large bowl beat sugars and butter until well blended. Add anise seeds and eggs. Blend well. Lightly spoon flour into measuring cups and level off with a knife. Stir in flours and baking powder and mix well. Stir in almonds.
3. Shape into two 10 X 1" rolls. Place 4" apart on the cookie sheet. Flatten into a 2" width. Bake 30 minutes or until golden brown. Cool completely.
4. Cut diagonally into 1/2" slices. Arrange slices cut side down on ungreased cookie sheet. Bake 6-10 minutes or until the bottom begins to brown. Turn over and bake 3-5 minutes longer until brown and crisp. Cool completely and store in a tightly covered container.
Makes 40. Often served with coffee.
(Note: Can use regular sugar, the baker's is just finer and can use all regular flour, the wheat adds crunch.)
