Waffles (made with milk)
1 1/2 cups unbleached flour
1/2 cup white whole wheat flour
4 teaspoons baking powder
1 teaspoon salt
2 cups 1% milk
2 eggs, beaten
6 tablespoons melted butter or oil
Sift all dry ingredients together. Mix milk with beaten eggs and add to dry. Blend well. Stir in cooled butter or oil. (Add some fresh or frozen blueberries if desired.)
Pour 1/4 cup into heated regular waffle iron. Makes about 9 waffles.
Can use all regular flour and whole or 2% milk if desired. We use the light olive oil (don't want to melt butter and wait for it to cool!)
Add fresh fruit of choice on top. We 'tiels love waffles. If there are any leftovers refrigerate and toast in the toaster. Can halve recipe.
(Chica asked us to share a waffle recipe - she's never had them!)
When we don't have enough milk we use the following recipe: See next blog.
